The racking cane is used to transfer liquids without disturbing the sediment at the bottom of the container. This is important for winemaking, as sediment can give the wine a cloudy appearance and unpleasant taste.
 
To use a racking cane, insert the spout into the container with the liquid you want to transfer. Then, tilt the container and slowly draw the racking cane up. The liquid will flow through the tube and into the other container.
