Chitosan (50g/1.7oz) is used with Kieselsol to clarify wine, mead, and beer and is added late in the brewing process. It improves flocculation and removes yeast cells, fruit particles, and other haze-causing detritus. Chitosan is a linear polysaccharide made from chitin shells of crustaceans treated with an alkaline substance, such as sodium hydroxide, containing randomly distributed D-glucosamine and N-acetyl-D-glucosamine.
